This experience is for anyone curious about the art of cooking over flames, smoking, grilling, rotisserie, and working with wood-fired heat. The day begins with coffee or tea before Mike walks guests through the plan. The class centres on preparing a full meal with fire, starting with deboning a lamb shoulder and learning techniques for stuffing, cold smoking, rolling, tying, and rotisserie cooking. Mike demonstrates wood-fired flatbreads, charred sauces, and flavourful rubs. This part hands-on, part demonstration class concludes with a shared meal of rolled lamb shoulder, fresh salads, pickles, and fire-baked bread.
